Maltitol

Maltitol is a member of the family of polyols, which are extracted from starch. This sweetener is extensively used as a traditional sugar substitute when making sugar-free sweet products as it behaves much like saccharose. It comes in liquid format for better homogenisation.

Technical benefits

  • 75-90% sweetening power with respect to conventional sugar, which means it can be used without any further sweeteners.
  • The flavour is quite similar to saccharose, so it does not affect the flavour of the products.
  • A non-cariogenic product.
  • Low in calories in comparison to conventional sugar, it provides only 2.1 kcal/g unlike saccharose which provides 4 kcal/g.
